Eau Palm Beach Resort & Spa hosting wine pairings dinner with Orin Swift Cellars on Feb. 25


Eau Palm Beach Resort & Spa’s terrific signature restaurant – Angle – on Feb. 25 will host its first Uncorked Winemaker Dinner Series with one of the deeper wine pairing menus of the Winter season. In partnership with Orin Swift Cellars, the evening will begin with a Supper Club style reception at 5:30 p.m. in Angle’s Champagne Bar followed by a multi-course dinner at 6:30 p.m. featuring a selection of wines from Orin Swift Cellars.

The evening’s host will be Stan Gross, director of regional chains at E&J Gallo Winery. All told, the dinner ($250 per person) will feature eight wines selected by Eau Palm Beach Resort & Spa Sommelier Pamela Bafumo and Angle Sous Chef Joseph Oesterwind.

“One of the great things about Orin Swift is that it has great tasting notes,’’ Oesterwind said. “We looked to see what we liked about each wine. With those notes that I liked, I wanted to do similar or contrasting (menu) flavors that go with that specific wine.’’

The Reception menu will include smoked swordfish, aerated lemongrass, toasted coriander honey (paired with Blank Stare); chamomile duck breast, vanilla poached apples, celery root (paired with Fragile Rose); rhubarb gazpacho, Florida strawberries, whipped crème fraiche, heirloom tomato (paired with Mannequin Chardonnay).

The Dinner courses and wine pairings will include charred octopus, Holman’s Harvest greens, avocado ‘marble’, lavender vinaigrette (paired with Abstract Cabernet); pan seared lamb belly, pistachio gnocchi, glazed thumbelinas, black berry molasses (paired with 8 Years in the Desert); Intermezzo.

The “Dueling’’ Main course will feature braised short ribs and Creekstone prime ribeye, cornmeal porridge, confit tomatoes, fennel & beet jus (paired with Papillon and Mercury Head).

A surprise desert course will be prepared by paired with Machete.

Nearly the entire menu, Oesterwind said, will be prepared from scratch.

“It’s all new except for the rib-eye, which we have in-house. Wine menus are great opportunities to try things that maybe are difficult to try on a new menu.

“People who come into wine dinners are very open about what they like and don’t like. It’s a great opportunity to try new items that maybe you want to put on a future menu.’’
