Get uncorked Aug. 27 at Café Centro in West Palm Beach

Café Centro in West Palm Beach will host its next “ has announced the next “Centro Uncorked: Uncorked & Uncooked,’’ featuring a series of uncooked dishes, such as seafood and carpaccio paired with Taittinger champagnes, on Aug. 27 at 6:30 p.m.


Special guest Dave Ahearn from Republic National and an ambassador from Taittinger will be on hand to speak to the high quality champagne selections for the evening. Chef Jamie Steinbrecher’s four-course menu and pairings include:

Social: Oyster on the half shell with assorted mignonette, lemon, horseradish {pairing: Taittinger Nocturne Demi Sec}
Course One: Wahoo Ceviche with avocado, aji Amarillo, citrus, cilantro, taro chip
{pairing: Taittinger Brut Melliseme 2013}
Course Two: Cured Tuna Crudo with yuzu kosho, house kimchi, citrus, olive oil {pairing: Taittinger Prelude Brut}
Course Three: Beef Tenderloin Carpaccio with peppercorn crust, baby greens, fried capers, Vidalia onion aioli {pairing: Taittinger Prestige Brut Rosé}
Course Four: Burrata and Prosciutto di Parma with extra virgin olive oil, cracked pepper, pomegranate-balsamic reduction {pairing: Taittinger La Francaise Brut}

Price is $89 per person and reservations are required.
