The Cooper hosting Tequila Pairing Dinner on Aug. 23

It’s tequila time at The Cooper in Palm Beach Gardens, Fla. The popular eatery on Aug. 23 will host a tequila pairing party with a menu created by Executive Chef Adam Brown. The dinner begins at 6:30 p.m. Tickets are $79 per person.

“Tequiling Me Softly”
Siete Leguas Blanco, muddled cucumbers, lemon juice, and
cinnamon syrup

Hors d’oeuvres
Street Corn Shooters with chili-lime mayo, parmesan, and cilantro
Empanadas de Pollo with ají Amarillo crema
Carnitas Tostadas – slow-cooked pork topped with tomatillo salsa, shredded lettuce, and crema

Local snapper, fresh lime juice, tequila, red onion, bell pepper, ají Amarillo, avocado, oranges, maiz cancha, and cilantro

Birria de Cordero
A traditional stew from Jalisco, Mexico, featuring braised lamb shoulder, fire-roasted chilis,
tomatoes, and spices, accompanied by warm corn tortillas, lime wedges, and cilantro

Aves de Corral
Pasión de Fresa
Corazón Reposado Single Estate, apple brandy, housemade strawberry shrub, lime juice, and framboise

Tamales de Pato con Mole Negro
Braised duck and corn masa steamed in a banana leaf with a deep black, rich chocolate
mole sauce

El Jefe
Siete Leguas Añejo, agave, chocolate, and orange bitters

Served family style and dusted with cinnamon sugar, with Mexican hot chocolate sauce for dipping
