Paola DaSilva ihas been home for nearly one year and Fort Lauderdale foodies are better for it. One of South Florida’s best-known chefs, DaSilva, a former contestant on TV’s Hell’s Kitchen, returned to her Fort Lauderdale roots in September 2017 as chef de cuisine at Burlock Coast at The Ritz-Carlton. “My goal was to get back into Broward (county) market,’’ said DaSilva, who lives in Coconut Creek. “This position came open and it’s been a really good fit for me and the company.’’
Burlock Coast is The Ritz-Carlton, Fort Lauderdale’s inside/outside restaurant-café-market-bar that pays homage to the creativity of Prohibition era rumrunners. Its eclectic dinner menu includes a raw bar, whole fish of the day (try the fried snapper), ceviche, charred octopus and filet mignon. The BC Burger is an outstanding choice for either lunch, brunch or dinner. Burlock Coast also offers a terrific breakfast menu that features a tasty take on Huevos Rancheros.
DaSilva’s commitment sourcing local ingredients is apparent throughout the menus, but particularly in her salads selections, which include the Farmers Salad with citrus, almonds, fennel, radish, and tomato red wine vinaigrette; and Compressed Heirloom Tomatoes with Burrata, lemon zest, extra virgin oil and garlic crumbs.
“Burlock Coast was supporting local farms since before I got here,’’ DaSilva said. “I want to continue that. For me, it always comes down to great produce, great seafood and great technical skills in cooking.’
