The West Palm Beach Marriott has named as its new executive chef. Semedo will oversee the Marriott’s signature restaurant, Bistro Ten Zero One, along with the hotel’s in-house banquet and catering services. Semedo, originally from Cape Verde Island in West Africa, comes to Bistro after working as executive chef for Newark Liberty International Airport Marriott.
“My hope is to continue to bring fresh, local and handcrafted food to Bistro 1001 using classical French techniques with a modern flair,’’ Semedo said. “I focus on simple preparations and allow the ingredients to speak for themselves.”
Semedo began cooking at the age of 7 and never looked back. He went on to attend Le Cordon Bleu College of Culinary Arts in Boston and later worked at the at Mandarin Oriental Boston, the Harvard Club in Boston, as well as Newark Liberty.
Since his arrival at Bistro 1001, Semedo has made some significant changes. For example, he has helped to replant the garden area; creates charcuterie in house; and launched a new lunch and dinner menu that features hummus (black bean, edamame, garlic); Bistro Bacon LT with his house-cured and smoked bacon; Florida Snapper with a veggie and potato hash, chipotle corn sauce and smoked paprika oil; and a crispy duck breast served with duck confit, lima beans, corn hash, pan-seared foie gras and citrus duck jus.
In addition, Bistro 1001 has launched a new Sunday brunch from noon to 2 pm.
