After more than one year of serving up local brews and trendy wines, The Parched Pig in Palm Beach Gardens, Fla., is adding specialty cocktails to its menu.
Located a few doors down from sister restaurant, Coolinary Café, the rustic bar’s cocktail menu is debuting with summertime cocktails such as the Petunia Pig made with Plymouth Gin, Crème de Violette, Luxardo Maraschino, honey syrup, lemon juice and egg white; D. O. Double G. made with Gracias a dios Mezcal, black pepper, saline, simple syrup and lime juice; and Dancing in the Dark with cold brew coffee, Blackwell Rum, Hoodoo Chicory, Amaro di Angostura, Cockburn 12 year port, vanilla and cream.
In addition to creative concoctions, The Parched Pig offers classic cocktails revitalized, including the French 75, Gin Fizz, Daiquiri, Sazerac and Pimm’s Cup.
Those who prefer to enjoy cocktails straight can take advantage of the extensive bar collection featuring hard-to-find bourbons and smoky mezcals, poured in traditional ceramic shot bowls from Mexico.
Guests can pair the new cocktails with the seasonal snack menu featuring regional oysters, charcuterie (my favorite) and scallop ceviche. The dessert menu includes key lime panna cotta and bourbon-infused chocolate bread pudding. Complimentary apple cider donuts are passed around at last call.
